How to protect my mods from updates?

Hi everyone,
so I'm about to start a new BG playthrough with some mods, but I fear my Steam client will ruin my installation if there is an update. I tried to search the forums/net but didn't find any exact guidelines how to prevent this. So some questions...
  1. How frequent are the updates to BGEE/BG2EE? Is this still a valid fear?
  2. By using Steam in offline mode (how?), and setting the update settings to 'Only update when I play the game' should protect my installation?
  3. Is it true that I can simply copy-paste the whole BGEE (or BG2EE) installation to a directory and start the game from there - that way, when a Steam update happens it only touches the original files, but my copied version will be OK?

    1. Not really frequent these days.

    2. No, don't bother.

    3. Yes! Beamdog don't put nasty DRM in their games, so you can do this, and it's perfectly fine to do so! Just start the game with the .exe in the copied folder and you'll be fine! :)
