Have the canon party and only dynaheir can hurt the damn thing but not fast enough.

You need special silver weapons to hit it. Which weapons are silver? Kondar (bastard sword, found in chapter 4 or 5 depending on how you resolve the Aldeth Sashenstar quest), Albruin (bastard sword, found at the end of Dorn's quest), The Burning Earth (longsword, found in Durlag's Tower) Werebane (dagger, found in the ship), and the Sword of Balduran (bastard sword, found in the top floor of the ship).

Now, if you haven't invested in the relevant proficiencies, you'll probably want to render Karoug helpless so your attacks hit automatically. He has pretty good saves but no magic resistance; either Hold Monster from a nymph (Call Woodland Beings) or a wand of paralyzation is your best bet. You can then boost the damage with haste, high strength, or even backstabs.

For spell damage - he's 50% resistant to elements. Pure magic damage such as Magic Missile is most efficient. Cause Wounds spells will also work; the "weapon" they create is considered silver and can hit the greater wolfwere. Elemental damage such as wands of frost or of the heavens can help, but it's not great.

If you can beat that 30 HP/round regeneration, you're good.

There's a second lycanthrope boss at the end of the quest - that one requires cold iron weapons to hit. The list of cold iron weapons is almost the same, only lacking Albruin. Also, that enemy doesn't regenerate, so it's much easier to wear down.

Karoug is also susceptible to slow. Its worth casting even when you plan on stunning him, since slow also slows his regen rate down.

Clerics can also stack half a hundred glyphs on the floor and cast protect from lightning on themselves for the bait

Keep a potion of 24 str, potion of power and speed for a fighter. Should be ok even if you have no proficiency in the bastard sword or dagger.
