For BG:EE? You should visit Mods forum section here.
I adore Archaic GUI mod, it is so pleasing to the eye, like a real work of art. Faces! Mod adds tons of portraits to most named people you meet in the game, great for immersion. Scs is a must to have for me, I like my battles frustratingly hard and enemies smart.
For BG2, there are too many mods to mention. There is widescreen mod if you are ıncomfortable with the regular resolution of BG2. If you are an experienced player, ascension+tactics+scs2 is the way to go. There are many good small quest mods. Colors of Infinity mod series in spellhold studiosare nice and beautiful. Dark tower and Dungeon crawler mods add fun small dungeons. There are tons of item/shop mods out there, but %99 of them sell and give overpowered items. If you have difficult mods like scs, it may be useful. There is pnp mod to change graphics and paperdolls (which is so good that bg:ee has it from the go) spell revisions to make most spells more interesting, item revisions to make all items more interesting, and Item randomiser mod is tons of fun too.
Widescreen Mod, Fixpack, Tweakpack, Unfinished Business. If you're looking for a challenge, try Sword Coast Strategems. I've also heard good things about Ascension (but have never tried it).
All these mods (except Ascension) have versions for both BG1 and BG2.
