  This is a definite design feature of the game. The value a store will give you for an item depends on how many items are already in stock - and items you sell them are added to the stock. Precious items like jewelry do not depreciate, but it is best to try to sell everything else in groups of 16 if you want to maximize money. You can sell in even larger quantities if you can store items in some kind of bag of holding, but that is mostly for BG2EE.
