All NPCs in Baldur's Gate II have banters with each other and with the PC; in Baldur's Gate they don't.
That's why I find BG1 boring to play compared to it's sequel. Lately I've been playing mostly solo but the party interactions is what got me hooked years ago.
It's mostly just flavor to make the world and your companions feel livelier. But some characters will initiate romance talks as well, and these can effect your gameplay. You can recognize romance talks from the music that starts playing on the background, since normal banter doesn't affect that.
