They're almost all useless because the antimagic ray will strip them in an instant. Spell Shield used to be bugged and would block the ray indefinitely but it has been fixed since. It can still take a hit which should be enough to give you a little time. But you also have...

    Polymorph Self: Mustard Jelly!

Jellies are 100% magic resistant so they're immune to basically anything a Beholder can do to them (including biting attacks funnily enough, jellies are immune to piercing damage). And polymorph effects can be dispelled in the EE...

there are a couple things you can do:

use some summoned monsters, but send them in one at a time, because they will death spell them, but if you bring in one at a time hopefully they waste their death spell on the first one and then you can send in the rest, your summoned stuff might not kill them, but at least they can help weakened them a bit

area of effect spells: since the path finding can be absolute garbage at times you might be able to hit them with area of effect type spells ( cloudkill, firestorm, incendiary cloud, etc) cast them off screen on the beholder's location and watch them buuuuuuuuuuuurn :)

if you need some extra "look out space" without actually walking over there to see them, you can use the level 4 cleric/mage spell farsight, that spell can expand your sight reach without you actually going over there with a character
