By everything I mean getting every quests/events/special items in the game and if possible, the next game(BG2)? Include the stats too, please?

Won't happen, as there's class specific quests in the 2nd (well..you can with mods..but..), but a F/M/T can handle everything, a F/M/C is tougher but loses out on being able to get trap/lock xp...though you can just soak traps and knock locks, so there's nothing to keep you out.

18/18/16+/18/14+/13+.....if you can't manage it, feel free to scavenge points from charisma, wisdom, constitution, in that order.

There really isn't a barrier to doing/getting everything in BG1. Some of the dialogue will change depending on what NPCs you have, but the quests will be available regardless. You don't need to worry about being able to use every skill yourself because you have party members who can do it for you.

In BG2, there are class specific quests and strongholds, you can't do them all unless you mod the game.

Almost all the NPCs in BG2 have a quest of some kind if you keep them in your party long enough. Some have additional quests if you are romancing them. You don't really need to be any specific class to get those quests, but you may have to play around with party make-up if you want to do every single BG2 companion quest in one playthrough. You can't really complete multiple romances in the same playthrough either, again, unless you mod the game. :)

BG2 is really the ultimate in re-playable RPG, every different party composition yields different banters, interactions, and potential companion quests - you will want to see them all eventually.

I see. I hope there would be mods for that when the enhanced edition comes out.

What do you mean by soak traps and knock locks?

You can cast the Knock spell on locks to open them, and just walk over traps and take the hit. You might need to buff up first if they're really bad.

If your strength is high enough (or you have Crom Faeyr equipped) you could also bash open all non-plot locks except one. It's kind of hit or miss though. 19 will open a lot, 22 opens a bunch more, 25 opens all but that one.

Most traps just damage or poison you, and a mirror image or stoneskin can usually stop them (though they rarely deal enough to be serious at higher levels...except one that deals like 9999 damage...but you're supposed to go around that one anyway. Spell Deflection is also pretty useful for spell based traps. The only two traps that are REALLY difficult to by-pass are maze or imprisonment traps. Maze traps are more of an annoyance then harmful (the mazed character returns so many rounds later based on their intelligence), unless you're soloing which is instant death (it ignores MOST spell protections and defenses), but imprisonment always sucks cause the spell required to reverse it is extremely high level and fairly rare. Of course, a part-mage can just cast Spell Immunity conjuration or abjuration respectively and safely ignore them

Well, now you've got me curious. Which one is it?
