SCSII ; improves AI a lot. Some parts of the Tactics mod are nice too.

It's been a while, but I think the only essential mods are the official Bioware patch and Baldurdash and/or the fixpack. These fix a number of minor and not-so-minor bugs in the original game. Dungeon-be-gone is a good one to have if you are going to play multiple times and don't want to do Chateau Irenicus over and over.

Nothing else is essential. Other mods can add some variety and interest, and the quality of some approaches the quality of the original game content, but none of them are really essential.

In general, any of the mods that add content or encounters will also result in you accumulating experience faster than the game designers anticipated and resulting in a certain point at which the challenge level starts to fall. Some of the mods designed to make the game harder actually made it easier in the long run by piling on lots of additional experience and magic items.
