I enjoy playing a protagonist with a high charisma for RP purposes. I was curious though are there encounters in the game involving enemies where an exceptionally high charisma or use of the Friends spell changes the enemies attitude towards you? For instance in the spell description it suggests attacking orcs might spare the caster's life. I intend to test this myself during my own play through of EE but has anyone encountered Friendship examples yet?
I don't think so, but it can improve the quest rewards from certain NPCs if you boost your Charisma before taking to them e.g. Landrin will give you antidote potions, the dwarf in Ulgoth's Beard will give you the Kneecapper Warhammer instead of the Gold etc. My main use for the Friends spell, though, is to get the maximum shop discount (which kicks in at 20 Charisma), works well for Bards, as they have to have minimum 15 Cha, so they get to 21 Charisma with Friends
There are certain encounters where Friends spell will reveal additional conversation options. One that springs to mind is the Spider lair in the Cloakwood. If you cast friends spell, she will reveal some additional stuff about her origins.
I also know that a High Charisma impacts discounts (as has already been mentioned) and will impact NPC reactions (like Viconia deciding to join etc...).
Like you, I would have preferred these factors to do more. I envisioned that casting Friends spells on AGRO'd pick pocket victims would smooth things over. And I even imagined that the spell would effect Merl in Bergost, but I don't think it does. More's the pity.

You're thinking of Charm, not Friends. High charisma doesn't open anything new in her dialogue.
But yes, charisma is polled a lot of places in dialogues, though not necessarily directly. Many NPCs will have different dialogue paths and quest rewards based upon their reaction to you, of which one component is charisma (the other is reputation). There's also the aforementioned store discounts for high charisma as well.
