In any case you may want - a thief to help you with traps and locks, - arcane caster to make the game much easier with some OP buffs and crowd control spells, - another fighter/archer. After that, it's up to you really.
Suggested full party:
Imoen you get right away, she'll do fine as a thief and archer. Can optionally dualclass her into a mage later, when you meet Coran, a nice guy who is suspiciously good with a bow (and not too shabby in back stabby either). Before you get to meet Coran, can help out and get help from Kivan. Since you're a goodly barb, must help a fellow goodly barb wannabe ranger Minsc (and his witch Dynaheir, whom many people don't like for the lack of certain control spells, but Minsc likes her, and that's all that matters). Rescue Branwen, because it's the right thing to do, and you'll get a healer. Later you help out a good dwarf Yeslick, and possibly bring him along instead of Branwen from that point on.
One party I had a lot of fun with was 5 warriors one bard. Have the bard cast haste and sing, and watch your barbarian horde cut a swath of destruction through your enemies.
It's very easy to use and surprisingly effective. Throw some multiclasses in there like a fighter/thief and a fighter/cleric or fighter/druid and you're set.
I'm playing a Half-Orc Barbarian right now. His party has worked quite well and can be put together quite early:

You have Divine and Arcane casting covered, a great thief, and plenty of warriors. I have no complaints with this party and would recommend this to another Barbarian player.
Obviously most any party can be made to work. What I think would be a good set to go with, though? The well-intentioned-if-a-little-rough-around-the-edges party: Barbarian, Imoen, Minsc, Dynaheir,Neera, Yeslick.
