Help cure my disease (re-rolleritis)

After starting it a billion different times, I just recently beat BG1 for the first time. I did so with a Swashbuckler whom I have come to hate in BG2. He's just so squishy.

I have a terrible case of re-rolleritis.

I have never completed BG2. It's certainly not because I don't like it, but moreso because I constantly find something else I want to try. So I'm trying to pin down what it is exactly that I would enjoy the most and play it through this fantastic saga.

Firstly, I much prefer smaller parties; say, four max. I want to develop a character and a party plan with this in mind.

Secondly, I prefer melee / ranged combat / cleric spells to mage spells. I would be totally open to the idea of playing without a mage, entirely, if that's even feasible. For whatever reason, I just don't like them. I like killing them.

Thirdly, I like summons. Animate Dead and Call Woodland Beings - hooray.

Lastly, I've never backstabbed a monster. I think I would enjoy doing so, or having someone do it - but I've always had Imoen just chunking mobs with a bow when she was a thief. Some advice on proper F/T strategy, for example, would be fantastic.

Fire away! Any suggestions/help welcome.

TL;DR - guy who can't make up his mind looking for solid 4-player party. Prefers killing mages to playing one; inexperienced with backstabbing.

    For playing without a mage: I've done it once, used Keldorn and was a Wizard Slayer myself. The other team members were Anomen and Yoshimo, some others probably but can't remember. The RP theme was an inquisitorial mage-slaying party. Dispel Magic is really powerful from an inquisitor. Cleric defense spells mage the Wizard slayer much more durable.

    For summons: Roll a cleric/beastmaster, get Vhailors helm, prepare all summons --> double summons from Simulacrum

    For backstabbing: My favorite backstabber by far is Valygar. Crazy high stealth, good strength, katana proficiency (Celestial Fury backstabs have a chance of stunning enemies).

    Cleric/Thief is fun if you don't mind backstabing and having a more support orientated charname.
    That character fills 2 rolls as you don't need a straight cleric or thief and gives you more variety.

    Most people prefer to have a more directly powerful PC but its worth considering due to a 4man party
