I don't remember the exact cut-off point, but it's around 2100-0600, the game actually has several phases of day/night, like dawn and dusk in addition to obvious night-time and daytime. When I played I tried to roleplay it so that my party actually rested at night, and did stuff during the day, which actually inadvertently meant I didn't get some of the night-time encounters until quite a bit later than usual I think, which isn't a bad thing cos it meant my party was more prepared the first time I had to fight vamps.

Anyway if u rest sometime in the afternoon, u will definitely wake up at night-time, so I don't feel like you need to wander around to waste time. I sometimes 'double-rested' in order to avoid the party setting off at something like 3am, and just RP'd it as a day that the party decided to take a break and enjoy some R&R. lol 'Rest' doesn't necessarily have to mean sleep, right?

It depends I think on the specific quest. For instance you can pick up Alora as early as hour 20. Otherwise I'd say that it is dusk for hours 20-21 and then its "dark" until probably 5. If you don't want to overshoot you can always use ctrl-T.

I have an interesting fact that pertains to this. Area files have a flag that indicates whether or not night should last longer. For instance, all outdoor areas within the city of Baldur's Gate are flagged as having extended night. I'm guessing this was done in part to increase the window of time in which you can do the thieving quests. After a brief check with Near Infinity, it looks like the same flag is used for areas within the city of Amn.
