You can and will since there's loads and loads and loads of XP. It'll just take a pretty damn long while (about half-way through ToB, maybe a bit longer, so after dealing with Saradush's problems).

I would advise you to just keep him pure though. Sure he's a pure Fighter and that's a bit more boring, but he's already decked out to be a 2-handed sword/halberd user and with Greater Whirlwind Attack and his special Deathbringer Assault ability, he's practically god-like (pun intended).

As a fighter/mage he's pretty average as Fighter/Mages go. Late to dual and late to get those fun spells, but whatever.

as a Fighter/Thief he's actually pretty good, especially with Use Any Item, but a whole mess of down-time to basically get the same package deal with few or none of the Fighter HLA's to go with it... but ridiculous and lol-tastic potential Backstab damage. I'd say he has more potential to out-backstab an assassin or a Kensai/Thief.

There's basically no reason to dual Sarevok. His unique ability lends itself well to being a frontline fighter, and dishing out as many attacks as possible.

He can be a Fighter/Mage (Which are always great, even with average stats. And Sarevoks stats are not average) or a Fighter/Thief quite succesfully. But it's probably not worth the effort.

I've never played very far in ToB (got partways into that city that's under siege by fire giants or whatever) but played far enough to pick up Sarevok and I did find an excellent reason to dual-class him; a fighter dual-classed to level 1 mage is really unthreatening should he somehow ever get resurrected again from his petrified and chunked state...

    Yes!

You'll get there even faster if you farm the off-screen fire giants in Saradush for XP.
