Having trouble with thieving in ToB

Suddenly I am failing to open locks and remove traps when my abilities at both are over 100% even including penalties from armor. Any thoughts about what I might be doing wrong?

Shouldn't be happening frankly. Any mods?

Are you playing the original games? In the original game there was a bug with high level thieves, apparently if one thieving skill went too high over 240 or such, it reverted back to zero for the way the game calculated skill threshold. BG:EE must have fixed this.

Remember to take a look at your armor, certain armors reduce your skill levels.

Some traps are undisarmable in ToB. For example some traps in the underground level (one level above the sewer) leading to Gromnir's castle.

Only mod I was using was scripting, but I turned it off for my thief. I think @bbear’s answer is my problem as it seems that after I got out of that level the problem disappeared.

@SionIV‌ shouldn’t any armor effect be shown on your charsheet?

The precise number used to be 255 and I thought it was still the case in EE. I was under the impression that the old 255 number was an engine limitation related to bytes (numbers 0-255, 256 looped back to 0), therefore unable to be "fixed". Turns out I was wrong.

I just did some tests and came up with interesting results:

Subject was a Human Thief with 18 Dexterity, and the main test stat was Pickpocketing. Human gets +15, 18 Dex gives another +10, so +25 in total.

When leveling up, you can only go to 250 in a skill, the game won't let you spend more points on it. With the +25 bonus, it was 275 for my Human Thief. Using potions of Master Thievery or Perception, you can only go to 255 (280) somehow, it won't get higher than that. And that's only when you had a natural 250 (275), otherwise it will only go to 250 (275), not 255 (280).
Then I used potions of Mind Focusing to raise my Dexterity to 25 and I ended up at 315 skill. After every change, the skills I tested (Pickpocketing, Hide In Shadows, Move Silently, Open Locks - reached ~300 skill with all of them) worked perfectly - never failed. Interesting stuff.

Another cool observation was that Potion of Perception actually increases your Move Silently stat, and not Hide in Shadows (like it says it its description).
