Do merchants "re-stock" their supplies?

I'm playing BG1 and I noticed that when you purchase 3 of the same item from a shop, it disappears from the list so you can't buy any more. Do shopkeepers "recharge" their supply of items or do you only have those 3 chances to buy the item?

    No, but if you want you can make them to re-stock their stores by adding new items of the same type, and you need to set variables for that, I think it's not worth it, just go and check in other shop.

    It's not all the stores, and it's not all the items, and it's not always 3. Sometimes they have just one magic item, or a limited supply of something.
