I'm thinking of creating a remake of my Eldritch Knight, but I'm not sure how to balance it with the tools we have.
Right now, this is my plan:
Eldritch Knight
Advantages:
-Can become proficient in any weapon and specialised in any fighting style.
-Can attain standard Mastery (not High Mastery or Grandmastery) in quarterstaves, longswords, two-handed swords and spears.
-Can use any item.
-Damage bonus, accuracy bonus and APR bonus every few levels (exact levels TBD)
Disadvantages:
-Can cast 1 less spell per level.
It's advantages seem to heavily outweigh the negatives, but it's worth remembering that the class still has a d4 HP system
I'm also planning to add a few 'theme' versions of the kit.
Knight of Mystra (magic-leaning variant)
Advantages:
-Can become proficient in any weapon and specialised in any fighting style.
-Can attain specialisation in longswords and quarterstaves.
-Can use any item.
-Damage bonus, accuracy bonus and APR bonus every few levels (exact levels TBD, gains slower than Eldritch Knight)
Disadvantages:
Strength penalty of -1
Cannot be evil
Shadowknight of Shar (extremely fragile glass cannon with magic resistance)
Advantages:
-Can become proficient in any weapon and specialised in any fighting style.
-Can attain Grandmastery in longswords and daggers.
-Can use any item.
-Damage bonus, accuracy bonus and APR bonus every few levels (same as Eldritch Knight, maybe faster)
-Magic resistance increases by 1% every level.
-Poison weapon, as Blackguard of equivalent level.
Disadvantages:
-Constitution penalty of -2
-Must be evil
-Can cast 1 less spell per level.
Arcane Reaver (a purposefully unbalanced kit that reflects the fact that sorcery comes from powerful blood)
Advantages:
-Can become proficient in any weapon and specialised in any fighting style.
-Can attain Grandmastery in all weapons.
-Can use any item.
-Damage bonus, accuracy bonus and APR bonus every few levels (same as Eldritch Knight)
-Can rage as berserker once per day, gains another use of rage every 10 levels.
-Poison weapon, as Blackguard of equivalent level.
-Gains a point of Constitution at level 8, a point of Dexterity at level 16 and a point of Strength at level 24.
Disadvantages:
-Cannot be good
Thoughts and feedback welcome. It's worth noting that you probably shouldn't expect this to be out for a few months-this is just for testing the water and getting feedback.

I also realize that you use UAI as a roleplay thing since modifying items and profs are a pain and you are using roleplay to limit yourself, but imo worth it even if it does allow base sorc to use said items.
