Reclassing npc's

Hi everyone. I've been playing the Baldur's Gate and Icewind Dale series since they've come out and followed them since Bioware had little tombs of them on a bookshelf on their website to click on years ago.
I've partied up with everyone hero and villain in the, or near to it, and recently I made a party to incorporate all the new heroes. I love the voice work of the new heroes though I have trouble sometimes keeping Rasaad alive.
So I've put some thought into it and drew up my own 6 member party of self made heroes. Long as you can still do this I was going to do it through multi-player and save it over to my single player saves.
I'd rather reclass some npc's though, I did that years ago through Shadow Keeper. Problem was getting their stats correct, like their save vs throws, to be correct for their new class. If I take Mincs for example and give him 1 experience point and change him to level one cleric (for example) and adjust his save vs throw and stats, will he level up the same way a cleric would or would his programming only level him up like a ranger?
Thanks.

I bow to your knowledge of such matters.
I really like the idea of Nalia as a Bard... With her idealistic/ naive outlook, you can imagine her being really into heroic stories.
Also, dualling her to Mage is just too powerful... A Bard's support role is much better.
Although I struggle to see Keldorn as a Cavalier... Ajantis or Mazzy, definitely... But I just see Cavaliers as being younger/ less jaded, I guess.
Edit: And Valygar has to be one of the anti-magic classes for me.. Wizard Slayer or Inquisitor?
I've done Imoen as a gnome thief/illusionist. I don't know why but I like her as a little gnomish trickster. My newest run I have planned for my "forum journal" has her as a thief/wild mage, which should be fun.
I have used Yoshimo as a Kensai/thief which was really fun actually. I plan on making him a fighter 4-->Bounty Hunter next time (I always use Yoshimo)
Sometime adding kits like that is just fun.
-Safana is clearly a swashbuckler more so than any other character.
-I have given Jaheira plenty of kits now (all three druid), and I find it adds more flavor.
-Kivan is either a stalker or an archer
-I've made Ajantis a cavalier and an inquisitor (since he was Keldorn's squire it makes RP sense).
-Shar-Teel is an obvious psycho berserker feminazi from hell.
-If I ever use Cernd I might change him to another druid kit. If I ever use Faldorn she will be an avenger (Assemble!).
-dKagain as a dwarven defender makes sense as well given his bodyguard protection business
I pretty much ALWAYS make Garrick a jester nowadays. Probably my favorite.
Coran as a fighter/bounty hunter is great. Adding that kit fits his job description, though he is also very swashbucklerish in his personality
Minsc as a delusional barbarian makes a lot of sense and is pretty funny, but I've never actually gone with him as this.
Since he has high intelligence I like Khalid as a fighter/mage. Some protective spells might make him enter battle with a little less fear.
If I were to use Valygar again (I find him boring) I might make him into a wizard slayer or a thief dualed into one
Monty is ALWAYS a fighter/assassin or just an assassin
Xzar might make a good necromancer/cleric multi but I'll probably just stick to dual-classing him.
Last one is Branwen. She is supposed to be a badass barbarian cleric from the north... but her physical stats are a bit lacking imho. I made her either a fighter/cleric multi, but I think a fighter dualed to cleric or even a cleric/ranger would fit. Wonder if I can make a barbarian/cleric since barbarian is technically a fighter kit according to what some people tell me
