Questions about starting/joining a Multiplayer game/sesson

I'm an avid role player and I've always loved Baldur's Gate. However, I can't seem to find my interest holding beyond the first 3-4 chapters in either BG1 or BG2. Yes, the story lines are awesome but I guess the all years of RPing in MMOs leaves the interaction between NPCs wanting something more. Thus, the idea of a multiplayer campaign or series of sessions sounds very interesting to; combining what will hopefully be the best of both worlds (An immersive game with other players to share the adventure).
Before getting started, however, I have a few questions!
"Since we all can't play the protagonist to the main story is there some generally agreed upon way to decide WHO the protagonist will be?"
"Is it possible to ignore the main story and use majority of the world/quests as an open sandbox/adventure game?"
"When creating a character, is it best to go with whatever stats the RNG gives you during the creation phase or is it appropriate to re-roll for better numbers? Is it appropriate to min/max those numbers?"
"After a character is created, is it appropriate to play the game solo a bit it outfit them with some gear, items and gold before exporting them to a multiplater game, or should the character generally be out of the box with basic starting equipment?"
"How does gear get distributed in a multiplayer game? Is it a general consensus on who gets what based on their IC or OOC role within the group?"
I think one of the things that worries me the most about starting a multiplayer character or joining a session is that I've done similar things before in other games, such as Fresh RP restarts with a group of people. Everything goes well for the first week or two, but then some players lose interest or miss a few sessions and then drop out and eventually the group dies out. What's the best way to combat that in a BG environment because of the mechanics of multiplayer campaigns?
On that note, I am interesting in giving this a try. I don't mind NOT playing the protagonist or evening playing a supporting role to non-protagonist main characters with their own person plots. I currently have BG1:EE purchased through Steam and I am available most evenings (West Coast of North America, Pacific Standard Time) and weekends.
I got a couple of interesting character concepts in the works but I figured I would see about getting the above questions answered while I narrow them down!

We're a bunch of people planning to RP through the entirety of BG:EE and BG2:EE and we're big on the roleplaying aspect of our party. Saying that, it would help us to have someone roleplay as Gorion's Ward.
