The balance will inevitably change with mages getting stoneskin or abilities which grant immunity to normal weapons. Thus, being able to play a classic game of Baldurs Gate would be nice. Ehh.. to feel like it was in the old times. I liked the natural limits to magic in the original BG1.

If you want to play the original BG1, just install the original BG1. It is still available through a number of sources.
It should be doable. Unless the AI was rescripted to take advantage of the new stuff all that has to be done is to choose not to install the extra bg2 stuff, in the same way totsc separately installs new spells on top of vanilla game. Not sure how it relates to the topic though, are you agreeing or disagreeing.
As an example a totemic druid is able to solo Candlekeep right from the start. Summon spirit, it two-shots everything. Another druid kit is immune to normal weapons, equally easy. Not sure what a game it will be.
Making an option to install BG-classic style game should be easy. Sws AI mod has such an option, So does the EasyTutu( but bugged). The advantage would be, the game would be already balanced from the let-go, because the original is, and purists would be content too.
The developers will surely be rewriting NPC scripts to account for their new capabilities. The AI needs to be overhauled anyways, but at the very least the ToB scripts will be used (which assume use of the new abilities).
As for the Totemic Druid, the description states that they can perform one summon per day for every 5 levels of experience. i.e. They wouldn't have access to such spirits until after the Cloakwood Mine.
Stoneskin is another layer of mirror images, but it takes up a slot 2 levels higher, so there is a meaningful trade-off.
In short, your concerns are reasonable, some kits or spells may change the way the game is played, possibly for the worse, but the developers understand game balance at least as well as we do, and will adjust the game as needed.
