Question about multi classing and exp cap

Hi Im planning to play through the baldurs gate series soon after I finish icewind dale ee and I wanted to play a fighter/thief or thief/Mage but I know that the max level for multi classed characters is significantly lower than single class. I was wondering if by the time I got Soa and Tob I would reach the level cap too early? Also I've played a thief/Mage before and I really enjoyed it but I'm hesitant to play fighter/thief because I feel that i would just pretty much backstab and then auto attack for every fight, so does the fighter/thief have a lack of variety that would become very repetitive and boring by the time I got to Soa?

The XP cap is the same for any character, so reaching it will not be any different no matter what class you play.

What changes is how that's distributed - the points are evenly shared out between the classes in a multi, which means you will be some levels behind your single class counterparts. How many levels depends on what class you are - eg thieves level very quickly - but it shouldn't be very many, as the XP required per level scales for most of the game.

I don't find fighter/thieves particularly boring myself, but they clearly don't require the sort of management that a mage or cleric does. How much of a problem that is depends very much on your playstyle and preferences. There are a few powers your lead character gets that you can use, lots of items that you can activate, and later on a full set of High Level Abilities to choose from.
