I'm not sure if The Quest is on iPad but I've played it and all of its many expansions on my iPhone, PC, and Palm and IMO no other mobile RPG can come close to the quality of The Quest. It's a bit pricey for an iPhone game but it's definitely worth it. I would start out with the gold edition for $7.99 because it comes with the official expansion by Redshift and the first two expansions by Zarista Games. If you want more info I would check out redshift.hu zaristagames.com or the amazingly active and helpful community at catacomber.com

OH YEAH! I have The Quest Gold as well on my iPhone! I love playing as the Ravism ( I probably mispelled the race's name) and using their dark magic. That game is legit. Reminds me of Elder Scrolls Arena but it plays more than 10 fps.
@Vallmyr Over the past decade I have spent countless hours on this gem of a game. I can't tell you how many times I've played through the base game alone. The only thing I would change about it is to make civilians be able to die like in Arena. I never got the point of being able to attack someone (thus ruining your reputation and having the guards arrest you) without even being able to kill the person you assaulted.
@joluv Also, even though it's not a dungeon crawl, it's worth mentioning that KotOR is available on all ios devices. Man, that game is so amazing. I beat it and it's sequel (with TSLRCM) over seventy times over the years.
Wow, this post is making me realize that I REALLY need a life. Maybe I'll get one after my next play through of the Baldur's Gate series.
Thanks for recommending undercroft @Vallmyr. I did a playthrough with a dwarven party (warrior-axe spec, warrior-hammer spec, 2x priests for a load of healling). It was fun.
While not really a dungeon crawl, Heroes & Castles is a good fantasy app. It's damned hard though, I have to say...
Any of the Spiderweb games are fantastic. Avadon 1&2, and Avernum: Escape from the Pit and Avernum 6 are on iPad now with Avernum 2 coming soon. All the games are super long, have great stories, and TONs of exploration.

It has a Necromancer (Summoner) class.
Animate dead is awesome.
