Firstly I just wanna say YAY achievements!!
This is something I've always kind of wanted in the EE games, well they were something I wanted until I actually looked at them. Most are fine, like finish the game solo or do a new hard mode run or whatever but some are just really really stupid.
Like finish the game in storymode, why would I ever do that???
I'm never going to do a storymode run, I can't actually think of something more boring than storymode. I could be complaining about nothing and this one could be possibly be unlocked by finishing the game on any of the rea, I mean standard difficulties or maybe a quick final boss reload and difficulty change would suffice.
So maybe that ones fine but the finish the game with a full dead party one, just doesn't make any sense. To me that translates as finish the game as poorly as you possibly can, like win but really suck while you're doing it. So get the final boss to near death and then let him kill all of the party besides CHARNAME, sounds pretty terrible and pointless to me.

The thing with your criticisms, is that *all* games with achievements that I've played have a bunch of them that require you to do something other than ordinary game play in order to get them, and sometimes require an enormous amount of time and dedication to getting that one difficult achievement.
Many of the easy ones come through normal game play, and many of the both easy and hard ones come from doing something crazy. (World of Warcraft gives you an achievement for jumping off a cliff and dying. Achievements like that are written with tongue firmly in cheek and a wry sense of humor.)
The hard ones and the ones that require you to do something crazy are there so that the people who get them have a sense of satisfaction that they went through the requirements and got an achievement to pop that most people will never get. It can be very reinforcing to "light up" those little squares in the Steam interface (or the World of Warcraft interface, or whatever game), and read back over your "collection", indulging yourself in admiring the "rare" ones that you went through a lot of effort to get.
It's about self-satisfaction and bragging rights among friends, but the harder ones or the crazier ones aren't for everybody. I usually just enjoy the ones I get from playing the game normally, and I occasionally collect a few of the crazy ones if they don't take too much time. For example, I talked to all the tutors in Candlekeep to get that achievement, which is something I will never do again. I may eventually try to get the one being poisoned, diseased, and fatigued all at the same time, if I ever remember to do it once I have all the spells for it handy.
Collecting achievements is also motivating me to do a completionist play through, since so many of them are hidden, and I keep getting surprise achievements with funny names that make me smile, just for completing quests normally.
