Because it's just plain hideous.
Keep in mind that it's just my own opinion, but as you can see is shared by many others.
Why replace a perfectly good old look of menu's and character sheets and force upon users new underdeveloped ones?
It just doesn't make any sense.
When can we expect a frontend in-game solution to tweak out any unnecessary changes brought by 2.0 and 2.1?

Albeit considerably back-end but if it really bothers you so much you can configure the UI to your preference.
I am loving Pecca's widescreen mod, if your screen width is more than 1500 pixels then you can get a LOT more information there than the old character sheets.
Just to show the breadth of the new system, this is something I did with some assistance. One of my final BG2 charnames. No scroll bars. It is not a complete wall of text, I would like move the compacted proficiencies list up to the front page and I know how to do that now I think but I would like to do a bit more with colors or fonts to break it up a bit more first.
