Revert back to version before 2.0?

in Baldur's Gate II: Enhanced Edition
I would like to have the possibility to revert back to version from before 2.0.
I don't like the new menu's and several other features.
Alternatively I would like to retain some of the features from 2.0 (for example I don't mind new sprites and journal notifications).
Is there a way to tweak them independently?
Is there a guide?
Will there be a tweakable version of the game from before 2.0?

    Baldur's Gate 2 --> Properties --> Betas. I believe you can revert back to 1.3 but I'm not sure about 2.0.
