(Spoiler Request) Do Romances reach their peak before the Siege ? Are there romance conflicts?

I'm asking it because I was thinking of having Viconia and Safana in my party. As far as I've heard Viconia's isn't really a romance, and Safana's brings chaotic consequences . So my questions are:
-Can I have continuous dialogues with both? Are there romance conflicts, even though Viconia isn't really dating you?
-I was thinking of doing the final part (The actual siege of dragonspear) without Safana or Voghlin (and replace with Minsc and Dynaheir) , but I don't want to miss the climax of the romance. Is there a timing related to these events?

As far as I can tell, booting a party member does not kill the romance, and even a romanced party member not in the party will show up in the ending sequence... but I haven't tested this so I could be wrong.
Ah. I won't tell you how clothed she was when I found her with that elf in the mask, then.
I'm still in chapter 3 of BG1 , so I guess I'll be playing SoD again by the next week or so, but I think it's worth trying to date Safana!
You've still got Rasaad! (If my protagonist were female I'd surely date him!)
