Tutorial/resource for EET on MacOS?

All the tutorials I've seen specifically highlight tools for Windows. Is it remotely straightforward to use EET on MacOS (install BG1-specific mods into BGI folder, setup EET, install the rest of the mods) or am I better off just running BWS in Wine or something and copying the override folder out? (Does that work? I haven't tried.)

I'm a programmer but haven't messed with EET at all. Any guidance is much loved and appreciated.
