Namely, which races/genders each of the new NPCs will romance. Is it possible to know this without waiting for people to try every combination? (Like using one of those save editors and looking for flags or something)

    It can commonly be seen in the .DLG files for that particular NPC, yes, where certain dialogues/global modifications will only trigger on certain conditions, e.g. race, reputation, stats, etc.
