How do I create a sound set?

I had seen this video on Youtube a while back 
http://www.youtube.com/watch?v=5KqjOGdOMtA and now MUST create a gnome barbarian. I already used a screenshot to make portraits, but have no idea how to grab sound bites from the video nor what format they need to be in to work with the game.
