For a low level monk, you should go to the carnival and pick up the shield amulet. That will give you a 4 AC in melee and 2 AC against missiles before you start factoring in dex, ring of prot, boots, etc.
An 18 dex, +1 ring of protection, boots of sun soul, and the amulet give you an AC of -3 before you hit the Naskel mines.
