flayers damn i hate those things! first time i encountered them i was unprepared for their abilities, even my elf with his natural stun resistance was caught, my main strgy is put minsc into immunity with chaos or freedom, then have him slice them up, mean while the rest use ranged weapons
My usual tactic is to give my best ranged attacker the Boots of Speed, buff them with Chaotic Commands and then have them run around attacking the Illithids at range. Pretty easy since Mind Flayers move really slow.
It's hardly the most graceful or efficient way to go about it but one of the most fun times I've had in BG2 was watching my Dwarven Barbarian zipping around the Illithid city throwing his hammer at everything while the rest of the party locked themselves in one of the cells.
Alternatively you can do the same thing with your hardest hitting melee fighter but also buff their AC up as high (low) as you possibly can and run around taking potshots at them. Make sure said fighter has decent intelligence so you can survive at least one hit from a Mind Flayer and then evade them while you wait for the "Mind-Sucking" effect to wear off.
I can't really comment on how this works with SCS II since I'm actually in the middle of my first playthrough with it installed and haven't gotten that far yet.
For super buff fighter, you just need -10 AC since the mindflayers and illthids have thaco of 10. They can still crit hit you, so use a fighter that has 11+ intelligence.

Elves aren't resistant to stun, just sleep and charm-based spells (and only 90% resistance)
