Hmm... I thought I remember trying it before and it didn't work. Oh well, I guess it does then.

Didn't work in BG1 vanilla - don't think it's really supposed to work but perhaps it was changed in BG2 - but it does work in BGEE...

It really depends on which thieving skills you want to use. Could
    you extend on that?

Well I don't want to need any other thief. So the main things are detect traps, open locks , pickpocket and steath for scouting I guess. I wouldn't mind throwing a few traps around and I read detect illusion is useful as well. I imagine there are potions for things like pickpocket that I could use and could use a mage with knock. I played BG2 Years ago but have never played BG1...I want it all lol.

I usually only use open locks and detect traps of my thief. In that case you could start as thief and dual to fighter at lvl3. If you want more points you could dual at level 5. Either would give you exactly the right amount of thieving points and minimize the amount of THAC0, damage and attacks you miss from fighter levels.

Also keep in mind that a F/T with backstabbing (quarterstaff +3) is probably the strongest class in the game.

I don't know if it's been adapted for BG EE yet, but if it has, definitely look into the Rogue Rebalancing mod.
