I'm in love with the IWD series for a lot of the same reasons. Everyone here's given great recommendations, but I also recommend trying out some mods. They can make the game new again.
A mod is a fan-made addition to the game. Relatively easy to install and some can be excellently made and very well done. Others... not so much. New quests, items, NPC's etc
Just started a run with BG2 conversion mod, added NPCs (didn't use them though, maybe next time), fixpacks and restored content. My elven archer with 5 bips in long bow is a killing machine. And the rest aren't too shabby either. A slight bug maybe, but my mage-thief could choose 7 level 1 spells during creation.

That sounds amazing. I have been in the dark ages I suppose!

Also "mod" is short for modification. Which I don't know why one wouldn't mention when explaining what it is, since the word itself makes for a pretty good explanation of the concept :P

I might be a nerd, but I am also a natural blonde so I still would've needed an explanation!
@EntropyXII I checked out the gameplay video on Shadowrun Returns--it looks pretty cool! I may have to get a copy, though my semester starts right about then...
And to pimp my own guide again, it's a good roundup and order for IWD mods.
I went through your modlist. The mods you made were flawless, but I ran into the following issues:
1PP Animation Fixes: installation gives me the error "Executable appears to be incompatible." I tried various compatibility modes and installing after other mods, but no luck!
1PP Productions: the download file is not available, Erephine took it down because it was reported broken.
@Wikkid_Suhn - You have to run the 1pp for ID installer three times for it to install correctly, once for each part. If you just try to install all three parts without closing weidu in between it will give you an error (Iirc the one you got).
How awesomely inconvenient! I never came across anything mentioning this in my research, so it looks like I'm stuck with what I got. Thanks for the information.

I especially loved the NPC mod.

If you are interested in modding IWD, I've written a short install/order guide that covers all the major IWD mods.
But what in the nine hells is a mod?

Widescreen Mod: never works for me.
Also, the working link for the Auril's Bane Download is: http://www.baldursgatemods.com/forums/index.php?action=downloads;sa=view;down=21
Barring that, I installed:
1. Auril's Bane (skipped Grog's fixpack)
2. IWD Fixpack
3. Improved BAMs
4. High Quality Music
5. Unfinished Business
6. Icewind Dale NPCs
7. Tweak Pack
I started the game up and it seems to be working okay. Thanks!
