If you could change BG1 NPC kits/classes, would you?

(You can with Level 1 NPCs actually, assuming it works with EE yet)

Example: Minsc would make a perfect Barbarian(in fact I think that's partly why they made him a Ranger and not a Fighter - this limits him to Specialization, just like a Barbarian, and he gets the Rage); Ajantis sounds like a typical Cavalier; Avenger would fit Faldorn perfectly; etc.

I think that only few NPC in BG1 should have a kit. For me it is Kivan - Archer, Faldorn - Avenger and maybe Ajantis - Cavalier, Safana - Swashbuckler (she relates some stories about pirates, but she is probably making it up).

This is a fun way of mixing up the game a bit after you've played it a million times. Or making some NPCs that really suck a little bit more useable. Any of the bards would be an asset with any of the bard kits but really suck plain. And yes, I know you CAN use them but really, its a bit like riding in a wagon with pentagon shaped wheels.

I myself wouldnt really change many of them. Minsc is a ranger in my book - he is a Rashemen after all - and Ajantis shouldnt be an archer just because he has an archer portrait - rangers use bows too.

I'm not sure if kits should be the norm rather than the exception. Ajantis might fit as a cavalier tho.

For starters, I'd chance Imoen into a monk and shave her head. Minsc on the other hand would become a beastmaster and Dynaheir a sorceress. Since Garrick's existence in itself if a joke, his destiny is the jester kit. Shar-Teel is a full fledged barbarian of course. Kagain is no doubtly a dwarven defender by heart. And I'm sure both Safana and Eldoth would make great swashbucklers.

I quite fancy making Imoen into a bard. That way she still gets to pick pockets and dabble in magic.

I could see Eldoth as a blade.

And since I can't imagine Alora ever backstabbing someone it might be appropriate to make her a swashbuckler (though Alora being "the epitome of charm and grace" is admittedly a bit of a stretch)

I can kit the NPCs, and sometimes I do. Eldoth to jester as he mocks people all the time, Garrick to skald because he is more singing about epic tales than contributing something to them. Montaron to assassin/fighter; it's simply what he is.

I usually don't, though I'm tempted to in my next playthrough. Kivan->stalker is the big one -- I feel like his portrait tends to bias people toward archer, but stalker's a better fit for the dark/brooding persona. Also Garrick->skald for the reasons @KidCarnival mentioned. I probably won't make too many other changes (maybe Faldorn->avenger?) because I'm a bit of a purist as far as NPC classes/proficiencies/abilities go.

Also, there's a mod at http://forum.baldursgate.com/discussion/12326/mod-giving-npcs-classkits-tool-version-alpha-6-mod-version-1-7/p1 that assigns kits en masse, if you want to do so without fiddling around with EEkeeper.

I've never gave or changed kits for NPCs. If I really want to play certain kit, I'll just make my PC one or I'll make an extra character through multiplayer. However:

I would change rassad from a monk to a sun soul monk since that is what he claims to be but currently isn't.

    Yes

I do this all the time with EEkeeper. Most notably in my current game, Rasaad to Sun Soul Monk and Imoen to Swashbuckler. The latter is more to just make her better than due to much actual storyline justification =P

With Kivan, it's weird. It's really just his portrait that screams archer; he's just as effective in melee. Haven't kitted him yet, just changed to a non-archery portrait to get over the "give bow, done" effect, but Stalker is a good call. I shall try that in a future run.

The BG1 NPC Project (iirc) and the BG2 Kivan mod both have him as an archer, which is what I have always viewed him as - so that's quite covered in my games. I also like making Minsc a berserker (though admittedly barbarian wouldn't feel wrong either), Montaron an assassin and giving Imoen and Nalia the mod-added adventurer kit that removes backstabbing and gives +20% to lockpicking and trap disarming.

I also tend to make Jaheira neutral good as I feel true neutral isn't really what she is, at least in BG2 where more of her character comes across.

Yeah, I've always pegged Kivan as a stalker...what is he doing when you run into him? Stalking bandits.

I could see Minsc as a barbarian as well. There's no law that says you CAN'T have an animal companion if you want one, you just don't get the innate ability to get one easily unless you're a druid/ranger (It's a first level druid spell (not implemented) that if it succeeds the animal permanently becomes your friend, unless you start grossly mistreating it).

    Ajantis is definitely a cavalier

    Faldorn is an Avenger

That's all that really jumps out at me.

There are kits that are definitely applicable to some NPCs, but they aren't Implemented. (Such as Eldoth being an charlatan....perfect fit, or Alora being a Wonderseeker).
