As for your game, I have a halfway completed play through of BG1 with a solo archer on the forums, so for BG1 at least, you can get an idea of the way that play style works. Other than that? I rather like the cleric of talos myself. It's unusual.
You should play the character YOU like. Nobody but you can finally say if you like this or that character/build/party composition.
All three characters are good.
I think you should try them all and decide what playstyle suits your own taste better. Usually it doesn't take much time to understand if this or that especially "ticks" for you.
From my point of view, the most potential in terms of power through all the saga belongs to Odion. Of course, an Elven Archer is a machine in BG1 but you look at the whole saga and in the late SoA and in ToB it won't be so badass any more. A Talos Priest can be not so OP but with due buffing he's a solid tank and his summoned skeletons (also buffed) can kill many enemies without much trouble due to high Magic Resistance.
But a Dragon Disciple is more powerful than them combined. With an accurate spell selection he can be an invinsible character right from levels 3-4 till the very end of ToB. And in the very start of BG1 just use wands of Sleep and you'll be fine.
I would like to mention that 21 CON is nearly the same as 20 CON - both these numbers give regeneration, the only difference is it's 1HP per 60 seconds and 1HP per 50 seconds.

I agree with that, but I always play magic users. Mages are my favorite class, because, at 1st level, they are pretty weak, though my best mage I ever created (Level 31) was incredibly epic. So if I were you, I would choose the sorcerer.

I appreciate the response. I actually deleted that sorcerer and created another one as soon as I realized that having the better spell progression is superior to anything else. The extra spells I would miss out on would really add up in the endgame (30+ fewer spells). These missing spells could be used to make up for whatever the vanilla Sorcerer may lack, with plenty left over to easily give it the edge.
Here is my new Sorcerer. I am about halfway through the game with him (I would be further along but I have other games with other characters):
Because of his strength I put a pip in dagger and he is a dagger throwing madman . I am yet to use any stat boosting tomes (other than Charisma) so those are still on the way.
