The Final Battle

I am about to head off through the Thieves' Maze to kill Sarevok and I was wondering two things: firstly, what are the best spells and objects to have on you for the fight; and secondly, whether you can rest anywhere once you've entered the maze. I was just curious, so if you can help, your opinion would be appreciated!

I think you can rest in the maze. If not, you can rest in the area immediately after.
When I'm buffing, I'll usually end up chugging all my high end strength potions, potions of speed, and fire resistance potions and try to space everyone out so they don't all get hit with nasty stuff at once. Half of that will then go to waste because someone will dispel the group.
One strategy is to drop a bunch of web spells while your front line is equipped with Spider's Bane and/or rings of free action and nail Sarevok with a Greater Malison and Doom so that he MIGHT fail his ridiculously good save. Scrolls of Magic Protection would also be useful, though they negate any potions you drank. The things to watch out for are Sarevok hitting like a truck, Angelo peppering you with Explosive Arrows, and Samaj doing normal wizard hijinks. You can lure them out one by one if you like and that makes the encounter far more manageable.
Also, about what you were asking, once you get to the final battle, it's best to have each of your warriors drink a Potion of Storm Giant Strength and put on an Oil of Speed. Anyone who's going to go into the fray should drink a Potion of Magic Shielding, which protects them from a lot of the hazards in the final battle and doesn't remove any of their other buffs.
You can rest in the maze without being interrupted by enemies. I think you can rest in the area after it without getting interrupted by enemies either.
As for the rest of the pt, especially the range one, give them the potion that make them immune to 5th lvl spell and lower. Once u do that everything seem to be pretty easy. however do note that the potion will dispel all the buff u had made to ur party
Trap (as much as you can).
Lure Sarevok in the trap (wear the Cheetah boots) using an Arrow of Detonation (so Tazok will reveal himself). Potion of Invisibility. Don't kill him yet, there's more XP to be gained.
Oil of Speed. Potion of Storm Giant Strength.
Poison Weapon. Backstab the archer. Potion of Invisibility. Let him to die.
Arrow of Dispelling in the wizard. As soon as his protections goes down, change to some Arrow of Piercing. The previous poison should still be active. If it's not the case reactivate it. Stop shooting the wizard as soon as you see him poisoned. He's dead already.
Potion of Invisibility. Backstab Tazok with Poison. Get away from him and start using Arrow of Biting. Shoot Tazok down. Make sure he's dead.
Now it's only family business. The trap(s) should have hurted Sarevok really bad. Keep away from him, shoot and run like the chicken you are (hey! You don't want to end up like Gorion, do you?) or you can use more Potion of Invisibility to keep backstabbing him using the Staff of Striking (I know I did).
Long history short you'll need:
Set Snares (as much as you can)
Oil of Speed (2 just in case)
Potion of Storm Giant Strength (2 just in case)
Potion of Invisibility (3 obligatory, 5 just in case)
Poison Weapon
Dagger of Venom (optional)
Boots of Speed
Protector of the Dryads (low speed factor is crucial in this battle for hit and run) or any other bow (not recommended)
Arrow of Dispelling (as much as you can)
Arrow of Biting (as much as you can)
Arrow of Piercing (as much as you can)
Arrow of Detonation (at least 3)
To backstab Sarevok to death you'll need:
Potion of Heroism (optional)
Potion of Invulnerability (optional)
Potion of Invisibility (as many as possible)
Potion of Storm Giant Strength (just in case the previous one loses it's effect during the battle)
Oil of Speed (just in case the previous one loses it's effect during the battle)
Staff of Striking (recommended - or any other thief weapon)*
* If you're using the Rogue Rebalancing Mode you should check "The Silent Blade" (aka Short Sword of Backstabbing), otherwise go with the Staff of Striking (even if you are not proficient with it)
Did this and killed everyone in the room without getting a scratch.

It's a little PTSD that my PnP DM imbued in me.
And if you want to be a good Thief you need to be like Batman: have all kind of gadgets for the right occasion.
Just made a test: Thieves, with UAI, are able to cast Find Familiar for a little HP Boost and another trick in the sleeve.
I actually do this roleplay when I get back do recover myself after the battle in Undercity lol

- Because Sarevok is expecting us now, not later. And we need a hot bath. Let him overthink about what we are planning to do, I've spread a lot of traps around the Temple just in case he decides to slip off.
And you can make it even easier if you use Poison Weapon before the Arrow of Detonation. Every caught in the blast radius will be poisoned. Learned this little trick with someone here in the forum (don't remember who to give the credits) and it should make the final battle way more light.
I'll update this trend once I return to the final battle in my current run. Right now I'm doing ToSC, will return to Candlekeep soon.
A Blackguard level 7 or more with Specialisation in Bows (**) using an Oil of Speed can literally kill the final boss and his henchmen in less than two rounds.
Even if they make all their saves against Fireballs and Poisons, they will take an average of 60 damage per round, each of them.
You'll need to invest points in it as you level up. Around 75-100 points will allow you to set them reliably.
They'll have all the arrows you need.
