UAI lets you use anything short of character-specific gear (i.e. no wielding Keldorn's sword or Jan's goggles).
It will also unlock all weapon and weapon style proficiencies, so while you cannot put points into non-Thief weapons before UAI, you *can* do so after.
Note: it very rarely comes up, but if you level a Thief to UAI and then dual it, UAI will remain active even while your Thief class is inactive.

Got it. I think the character-specific thing was changed for EE, though. I just tested it with Firecam Full Plate.

Yeah it used to work in vanilla but it is no longer the case. However the character-specific items still appear as equippable in the inventory (they do not have that red overlay), but when you try it does not work.
You can wield crom faeyr in your offhand and backstab with 25 str with your main hand I think, but you need to make sure the attack is with the main hand and not the offhand so you will not try to backstab with the hammer that you have 0 proficiencies with.
Isn't backstabing always done with the main hand weapon?
The backstab is made with the next attack. If that next attack happens with the main hand, it'll use the main hand weapon. If that next attack happens with the second hand, it'll use the weapon in the second hand for the backstab.

An easy, simple check is: "can a lvl1 Thief use this?" - if the answer is Yes, you can backstab with it. Otherwise you can't, even if you can use it.
