I managed to get Ashideena from Bassilius at Level One (sort of!). 3 minute video below:
I'm sure others have pulled off far greater things. What's the craziest mis-matched victory you've won in Baldur's Gate: Enhanced Edition? Would love to hear about it.
Many players go for Bassilus (not Bassilius!) early, but use the talk options to eliminate most of his undead. I would not recommend doing that at level 1, though. And not on the harder difficulty settings either.
Be careful if you use the talk down option, but have any clerics set to turn undead when there are undead near them, the skellies will still be turned and then turn on you later.
Had an interesting one first full run-through of BG way back in the day. I got to the city of Baldur's Gate for the first time and after watching my dad play, I knew about the two assassins that poison you. So when I was threatened by them, I force attacked them to try and stop the poison quest. I only managed to get one of them, the one that warns you of the poison and starts the quest (oops). So while doing random quests, I got the message that I had been poisoned with no way to clear. Que me trying to blitz through Baldur's Gate and the return to candlekeep before the five or so days before the poison kills me were up. I managed to make it to the final fight with about half my spells and everyone fatigued. It was the last day, so I could not rest. My entire party were levels 4-5 from doing only main story quests and running from a lot of the late game encounters because of my strict time limit. I managed to beat Sarevok by pulling just him to the front of the temple and kiting him with charname while the rest of my party bombarded him with arrows. That was a stressful run
At some point, I tried to get through Shadows of Amn and Throne of Bhaal with a team where no one was higher than level 12. I was unable to beat Sendai (her AC was way too good), but in order to get that far I had to win against quite a few higher-level foes, including Irenicus, Irenicus's pet black dragon, Gromnir, Yaga-Shura's whole temple, Ogremoch, and Diyatha's other minions.

someone in these forums back in the day was able to get pass the ravanger with a team that never leveled up (starting fresh from SoA), so their entire team was around level 7 or so, no doubt lots of exploits were used
