I think that if you have some sort of infinity engine editor and look at the .ids files I think it gives you the values for all the type of variables you can have
Not likely. Global variables are not stored in the engine anywhere. They are set by scripts and applied to games in progress if the conditions are met. Should one want to make a list, and it would be a massive one, they would have to manually look through each and every script in the game and compile the variables themselves. I doubt that the relatively little use which could be gained from this would be anywhere near worth the effort of doing such a thing.
