True, elves taught humans magic, but humans have more specialties as mages because humans are more progressive due to their shorter life span. Thus more specialties are available to them.
Or it could be that elves are naturally incompetent. Look at Irenicus. His plans are long-winded and utterly pointless. He doesn't even know what exactly he wants to do. But he also used to be an elf.
Besides, using FR lore, great mages are humans. Elminster, Larloch, Melf, Aganazzar...

They have fewer specialties because that is what is considered "acceptable" magic in elven culture. They may be better in their niche, but humans have become the pioneers of magic. Advancing new schools and spells while the elves hide away content in their percieved superiority.
