Suggestions for a Newbie!

I haven't bought NWN:EE yet, but the game looks great and I'll definitely play it in a couple of weeks. I'd like to ask you some suggestions concerning the character creation.
1) Can I have some elucidations on the several sub-races? Can you play them from the beginning, or you rather need to achieve some levels to subrace? (I am particularly interested in lich and Vampire)
2) In BG and IWD I used to play with Paladin (black guard), Thief and Monk. What are the best set for this classes,and which particular prestige classes can they achieve? (particularly interested about paladins)

The best prestige class for Paladin is probably the Champion of Torm. Weapon Master would be nice to get too but you need plenty of bonus feats from Champion of Torm to qualify.
Yet, in that website I haven't found anything about Vampires and co. Are Vampires, Lichs,Drows,Dracos and so on playable races?It looks so from another website I have seen...any idea?

Once all that has been added to your module, all you have to do from there is put Vampire in the subrace field during character creation and your vampire is set to go.
It's unlikely that any given module will account for a custom subrace, custom class, or any other feature without explicitly acknowledging that in their module description.
And secondly, how can I implement all these things with a game downloaded from Steam?

A module is basically just another game designed for NWN that anyone with the right set of skills can make (or modify to suit their preferences). You make or modify modules using the Windows version of NWN but once a module is made it can be played on Mac or Linux too.

Modules can be created with the Toolset, which is included with the Windows versions of the game. The settings of modules can vary as much as the people who make them. While BioWare was bound by their license to use the Forgotten Realms setting, players are free to use any setting desired, even historical (or modern) settings like medieval France, or perhaps just a nameless haunted forest located "somewhere". Some modules are created by a Dungeon Master for their personal use as a multiplayer host, while others are shared, some supporting multiplayer (hosted by someone other than the module builder), others strictly single-player adventures.
Just to recap, I can download The Bitter taste of Blood and play as a vampire, while I'd have to inject the vampire into, let'say, Forgotten Realms, to play the same subrace. What could I do in the second instance, if I only have a Mac?
I suggest you just play the game/modules as is until you become familiar with things before considering any modifications on your own. You got to be a good player first before you can be a modder.
