AFter you've saved herdalis, what is supposed to happen?

The planar troupe leaves forever. The playhouse is left empty unless your protagonist is a bard - in which case you can take it over and put on a play for your class stronghold quest.

@Arthas The mod Hidden Adventures introduces the mage "Alateto De Bonito" who is trying his luck as a bard in the tavern Den of the Seven Vultures (don't know the exact English name). He can be recruited for the bard stronghold if your PC is not a bard.
I don't know whether this is comlatible with multi-stronghold tweak and NPC Stronghold mod.
The mod does not change the Hear'Dalis quests.

@jastey Alatelo de Bonito exists in the vanilla game, as a flavor NPC. That mod doesn't introduce a new NPC; it just gives new content to an existing one.
That inn is called the "Den of the Seven Vales" in English, by the way. In game, the name is explained as a misspelling of "veils"; I take it the translation of "vultures" is a misspelling in another language?

The German name is with vultures (the birds). No idea why.

The way to find out? Talk to the innkeeper. In English, one of the options leads to an explanation of the name. The same should be true in German.
