Mod Install advice

So, first post on this site so let's hope this post goes right cause I have no idea how to post.
I've been working for the last week on how to install some BG2EE mods in the correct order. I began with EET mod install tool but I ran into some issues and eventually moved on to constructing my load order in Project Infinity using its SortingOrder feature. I have read through every mods readme for compatibility and tried to find forum soruce but I thought I should make a post as well before I begin my installation.
If anyone knows anything, I would like general thoughs on my install order as well as answers to the specific questions I have in the list below.
For those who do not know what * means in ProjectInfinitys SortingOrder, it will sort everything that I have selected in the mod that is not specified elsewhere in the SortingOrder.

It overwrites the UI (necessarily given it's scope) - any changes that alter/interact with the UI prior by other mods will be undone.
