Starting SOD, doubts...

Hello.
Ok, so I bought the game when it was published but never played it because I felt not interested at all; now I finished a BGEE1 LOB campaign and I want to continue with SOD with the same characters just to complete all the content I bought. And I have doubts:
First problem I see is that I have a custom party because I wanted a competitive group for LOB mode, and mostly because I can't stand the constant complaints, crying, conflicts and demands from NPC's with stories and problems I couldn't care less about. I'm not interested in romances and all this tbh. I'm focused on my char and don't want other distractions. And seems there's a lot of that in SOD, like in BG2... But some quests include items I want to have, like the Fleshripper bow (Safana quest), the Jaheira gift from Khalid or the Edwins Robe. If I don't let Safana join me in Baldur's City, she is lost forever for that matter? Because seems you can't return to the city (don't get why). In BGEE I only had Neera, Dorn... to do their quests and bye... seems I can't do the same in SOD if you can't return to some previous maps to recruit them?
(I don't want to use console or eekeeper for things like this, it kills all the fun for me to use those)
Should I start in LOB or Insane in this first run of the game? I'm a little depressed when I see enemies die to 1 arrow after playing LOB mode, it's like combats are ''too easy'' to get me interested. But I guess things will become more complicated later and maybe I need an Insane run first to be prepared for LOB. No idea...

Some quests can be done by simple swap ins and swap outs before more areas. Neera for example, you can get all the quest items without her. So what I do is basically everything in ch10, go back to the camp and drop two characters and pick up Neera and Glint and then go back to the river to complete their quests. Then go back to the camp and swap my two characters back in.
Edwin only needs to be with you for one kill so the same swap in and out works
Yes, seems the way to do some of the quests then. But what about Safana? If I don't recruit her in Baldur's city, is she lost forever, or can find her in other place? Because I'm interested in getting that bow for my mage/thief
The later NPCs, though, you need to meet and tell them to wait in/join the camp for them to be there.
This includes M'KHiin who will not appear if the encounter with Baeloth in the fighting pit did not happen.
There is one disclaimer, though: as far as I understand what I saw, you'll have to go and see them in their BG areas for them to reappear in BG:SoD* if they died in BG1. If not, they will not reappear in the camps because the scripts there check whether the NPCs are dead, and if you do not visit their original starting areas in BG they will not be revived. (I'm not sure this is intended, it looks like the devs wanted to make their appearance in SoD continuous but didn't follow through to the end.) EDIT: I elaborated on this here in more detail.
* in EET, they will stay dead if they died in BG1.
