How do you ever get it going?
Till level 29 without a healer?
And keep in mind I dont want to start in HoF mode but will play on insane difficulty
It's not easy. The most difficult would be to dual-class at level 29 in the middle of the game. Otherwise, U could dual-class at level 9, after putting 5 pips (Grand Mastery) in your favorite weapon (compatible with the 2nd class)! 👈
Berserker/Cleric: I played a trio on HoF, so other characters assured during fights, when my Berserker dual-classed at level 29 and lost his Fighter abilities.
Berserker/Thief: I started solo at level 10 on Insane difficulty in Heart of Winter and went directly to the Trials of Luremaster. After TotL, I dual-classed and got tons of non-combat XP in Lonelywood. It allowed my character to survive as a simple thief. 😎
Sorry, but I dont want my characters to shine very late into HoF mode and dont want to miss all that druid and cleric spells in the early to mid game.
From the posts of you I guess that you are a very hardcore gamer, which is fine, but I dont have the patience to wait till level 29 plus untill I can use all the skills of a character.
So what do you think are the best cleric and druid multiclass options?
Usually I play solo or small parties. The full 6 men party will have already a slow progression. If U add to that double or multi-classes, your characters will progress like turtles. 🐢🐢🐢🐢🐢🐢
So how do you think about:
Dwarven Defender with axes
Fighter/cleric as halforc with slings and maces
Archer as elf with longbows
Avenger with slings and whatever
Skald with crossbow
Sorcerer(or better dragon disciple)?

Fighter/Druid pure Druid or a kit?
I'd suggest a Berserker/Avenger if it's allowed by your mod. 👈
I dont want to cheat too much, I want a caster druid which is very strong
Yes, Avenger has 6 additional and very useful wizard spells! 👈
