Mine vote goes for something highly exploitive, so im gonna put it in spoilers:

Human Mage -> Cleric:
Mage dualed to cleric late.
The idea is:
You start with 18 wisdom, and as good as possible other stats.
Human mage, familiar and sleep(not sleep if LOB).
Then after collecting all 3 books in BGEE ur at 21 wisdom.
Lums Machine your at 22 wisdom.
25 wisdom will give you 1 more level 7 priest spell.
Then comes the big exploit:
When in tears of bhaal place:
1. Dual to cleric. (make sure you have a familiar)
2. If you want 2 tears instead of 1 tear you should do the talking with familiar. When familiar gives you tear via his "enter inventory" script you will get 2 instead of 1. But each tear delivered will increase global value by 1. And global value 5 triggers the cutscene. So if you suddenly above global value 5, the cutscene will never start and ur stuck there. But that cutscene set value to 6. So there is a Wait(1) in the code which basicly allows to deliver more than 5 tears with timing, saving and loading. The idea is that the cutscene start needs to be in actionlog when you spam tear nr 6-7-8 etc into the machine.
3. The 2 x tears allows you to choose what values you want. 2 of this, and 3 of that. As an example.
4. The 3rd thing is that you can clone urself with sircumlarium spell. And if you put the thing you want duped into slot 1, then fill rest of inventory with crap like potion of minor healing. And equip a limited wish scroll in quickuse. Well then your clone can use limited wish, and say: "I want to be rich". This will drop the item in slot 1 from clone. This item can be picked up and used, but is not movable after. But it will be usable for upgrades, and quest and such. Basicly: A tear can be cloned.... Same with vecna, gaxx, misslead scrolls etc... Just know that the dupe is stuck, and the original works as normal.
5. since ur freshly dualed to cleric and has 0 xp this side, it is time to do the good path of: TEST OF SELFISHNESS. This will make ur XP on cleric side go below 0. And that XP underflow creates a level overflow. Which sets max possible level (41 for vanilla), 50 for tweaks. It bypasses XP cap and everything.
6. If you want that extra level 7 spell cleric side, you will use familiar for TEST OF WRATH, to get 2, then dupe one of them for a total of 3. This will let wisdom go to 25.
7. You have 1 more tear to use. A 2nd for MR, or a 20% elemental res is perfect. At this point the immunity to +1 and less wont do much.
THE RESULT:
Mage 31 (if xp cap) = 4 level 9 spells. (1 improved alacricity, 1 time stop, 1 wish, 1 planetar).
Cleric lvl 41 = 7 level 7 spells. 8 with 25 wisdom. 9 with symbol.
So now you can with improved alacricity spam 9 implosions, or firestorms or earthquake or sunray, then refresh with WOL exploit WISH for 6 genies. All those 3 cleric spells ignore MR, 2 of them has crushing damage. Its epic!
Can ofc be done as a kitted mage. For more spells.

If outright bug-exploiting isn't on the table, we move on to the cheeseboard. You can trivialize most encounters with ease without violating the engine even a little bit. Spam traps (Skull, Spike, DBFB, pick your poison), clog the screen with summons to tank anything, keep Wishing for refreshed spells and chain Time Stop after Time Stop, the list is very long. Sorcerer is the obvious choice for many of these shenanigans, as you have consistent access to the necessary tools and spellcasting is... let's say "rather good".
But you can also do things more demurely and restrict yourself to "fair" gameplay under whatever parameters you personally choose (there isn't really any objective metric that doesn't have very fuzzy borders). Still, wizard spells remain ridiculously powerful of course, considering their many defensive and objective uses. In BG1 it mostly comes down to navigating your way through to the really good equipment in the most efficient manner; in BG2 it mostly comes down to preventing one of the many you-lose scenarios from hitting you (again often involving wizard spells, this time from enemies). Popular choices include dual-class characters like Kensai->Mage or Berserker->Mage, the aforementioned Sorcerer/Dragon Disciple, or some kind of multiclass hybrid like Fighter/Mage, Cleric/Mage, or Fighter/Mage/Cleric. But there's many, many options that are all valid and often differ primarily on philosophical ground and personal preference.
I'm personally partial to Berserker9->Mage for BG2, which covers all the bases and has no-nonsense offense combined with pretty impenetrable defense, without resorting to any special tactics for most fights. Point and shoot. Don't get suckered into dualing at 13 which is entirely wasted (you get to 5 APR without it). But that's just preference - I like simple strategies of just hitting things with weapons, and I am not at all partial to long setup times, summons, etc. (that being said I have long stopped playing a version of the game where solo play is feasible but that's a different thing entirely)
As a very rough and general rule of thumb I'd say offense > defense for BG1, defense > offense for BG2, spells > everything, and CC, CC, CC. And as always: pick based on what you like, not anyone else.
