Favored Enemy generally isn't all that great. No matter what you choose it won't come up as often as you'd like or, if it does, it will be too weak for your bonuses to really matter. I made a thread in the Help for new players forum asking for good favored enemies. You might want to give it a look, the verdict so far seems to be ogre and spiders.
It would be cool if the game could be modded to make favored enemies into broader categories. Instead of taking skeleton, ghoul, vampie or lich there would be an "undead" group. Other ideas would be:
As is rangers are one of the weakest classes. They give up grandmastery in exchange for stealth (situationally useful), charm animal (almost useless), free points in dual wield (useful), and favored enemy (useless).
It will pay off when you face tough Skeleton warriors. Get a good magical warhammer or mace and hopefully, with your hated enemy bonus you'll kill them before they rip you into shreds..maybe. ^^

But, if you don't like your choice, you can always EE Keeper that palookie into something enjoyable-r.
Stealth parties also require remarkably less healing in my experience...not even needing a healer in the party.

It'd be better if favored enemies were like in AD&D 1st Edition, where they just blanket-covered goblinoids, giants, trolls, and a bunch of other things...especially since giants, like, suck if they aren't your friends, and +level damage to them is sort of a good thing. It'd still suck to be up against a Skeleton Warrior, but at least by the level cap you could be comfortable in the knowledge that you could deal +34 damage to a giant with an unenchanted dart. And that Skeleton Warriors are a joke. They need to sound like the skeleton dude from the Conan cartoon: "KILL!".
Or if they did it the way it is in 3rd Edition, and just went, "Hey, pick something to hate. Pick some more things to hate, later.". So by the time you're at the maximum level possible for a Baldur's Gate game, you'll hate pretty much everything, but it'll really suck to be the thing you decided to hate at level 1.
Man, thinking of Skeleton Warriors makes me think of how awesome it is looting them for their magical swords.
Skeleton makes even LESS sense since you rolled a Ranger/Cleric and will eventually just destroy them instantly with Turn Undead. Ogre, Spiders, Dragons, or Demons would suit your class better.

Favored enemy should be changed to how 3.5 edition rules implemented it. Even for Stalkers. Maybe stick to the 1 enemy to keep the 2nd edition feel. When you look at it compared to other builds/classes still isn't as powerful.
Can't select things like dragons and demons in BG1. I really really really really hope that when importing a ranger from BG1EE to BG2EE it gives one the opportunity to change favored enemies for something more useful to that game. T'would suck being stuck with some 4 HD monster as an enemy when facing vampires, demons and dragons.
Didn't it in BG I to BG II? Otherwise, that would suck. And I would EE Keeper that.
Well, choosing a favored enemy RP says it should be something the characater doesn't like I suppose, but in terms of gaming, I suppose it should be something that's actually challenging to kill, skeletons are not hard.

But basically, what this feat does, is allows your "Favored Enemy (Undead)" bonuses to stack with other Favored Enemy bonuses, because almost everything has some skeletal component, and is therefore partially undead."
