Why couldn't they just raise Gorion from the dead?

Gorion had probably been raised before, on several occasions, being a well known adventurer, squishy mage, and associate of Elminster and all, and had a low Constitution to begin with. Even when you magically regain your constitution loss back, this doesn't have an affect on how many times you can be raised in PnP rules. Once you hit that limit, nothing short of Divine Intervention is going to bring you back.

Are you kidding? You think they’d cast that spell for free? You (the protagonist) looted the body and took everything, so of course they wouldn’t be getting paid for the service. What do you think temples are, charitable institutions?

Also, a low natural Constitution score, and worse when made lower by previous deaths, makes it very likely you will face permadeath rather than be raised. Even if you went through all the necessary steps, the chance is still very low it would actually succeed in the first place. Don't even get me started on the system shock roll if you use Raise Dead instead of Resurrection.
