Obviously Arcanum and PoR. I also wouldnt mind a retro downgrade/overhaul of NWN 1 & 2, I never liked the look of them and the UI makes me a sad panda. To bring those down to the older isometric play style would bring happiness to my pants. As for non-rpgs maybe a huge graphic update to the Legacy of Kain games, that would make me happy.

Also damn, lot of nostalgia in this thread. Lords of Magic, Rage of Mages? Oh yes, played them all. Even played RoM online back in the dial-up era as well as on LAN, what an absolute blast.
@Anduine Wow, I didn't think anyone would know about that game. "Bubble" effects and the prismatic spray are the things I remember the most from that game. Dragon fights are also memorable. Good for you to have friends who appreciate that kind of games.
I can't believe no one has yet to mention Jagged Alliance 2. Now that's a real classic in my book, on par with Baldur's Gate. I haven't played the JA:BiA, but I haven't heard anything about it but negative responses esp on bad CPU performance. And although there is a 1.13 mod has also been greatly evolving through out the years, I surely wouldn't mind having a quality team of professionals dedicating their time improving the game and the 1.13 mod. I hope Overhaul Games would consider overhauling that real gem.

Temple of Elemental Evil is the worst game that I ever liked to play. The gameplay is so great and very close to the 3.5E rules. The rest is just bad. The voice acting is bad, the music is digital and bad. Everything is bad but the system. If someone will ever enhance BG it should be based on ToEE. So much options in this game and yet is so bad

I'd be a little terrified of an enhanced System Shock 2. Modern shaders alone would make that game unplayable for me.
I remember back in the day, I turned down the lights, plugged in some really high-end headphones, and sat down to a game of System Shock 2.
That game would make me jump, to be sure.
(EDIT: I'd do the same for Thief and Thief II. I usually don't like to play games with headphones but those games really benefited from the positional cues and overall ambiance.)

Pac-Man Championsip Edition was released in 2007 for Xbox Live Arcade and eventually for iOS, Android, and other mobile platforms, on the PlayStation Network for PSP and PS3, and on the 3DS.
If that doesn't count as an enhanced edition, maybe ITS enhanced edition, Pac-Man Championship Edition DX, released in 2010 on Xbox Live Arcade and the PlayStation Network, does.
