Title gets the gist of it.. I always end up rerolling and I'm sick of it.
So what I'd actually like to do is get some input from you guys on what I should try next.
Things to rule out:
Halflings
Gnomes
Dwarves
Clerics (unless there's a mod out there for BG:EE that gives all classes access to all weapons, please tip me xD)
Bards
Historically I have played a lot of Paladins, Thieves and Fighter/Thief combos. Two-handers and dual-wielding respectively.
It is a big bonus if suggested char concept involves fighters, as that's the Stronghold in Bg2 i enjoy the most, but it is certainly not a must.
I have also tended towards playing characters that can go unbuffed through most encounters, albeit bosses and tougher fights such as the femme fatales after Nashkel mines or dem dirty dozen in sewers of Amn are alright to need buffs for.
Help me.. please! Constant rerolls are killing this amazing game (series) for me!

edit: Oh. Rule out. Nevermind then anti-dwarf person. Maybe berserker/Barb? They're both pretty good at unbuffed frontlining.
or for more fun
F/M/C
F/M/T
F/M
Seriously though. Try Blackguard. That seems close enough to what the OP likes while being different. Ya get all of the 'fighter' type things and some nice abilities too boot. And if the OP is normally used to playing 'Goodie-Goodies' based on the comment about playing a lot of Paladins.
Step 2: Create 6 unique characters all at the same time.
Step 3: Play the game
Step 4: When you encounter an NPC you would like to take along. Export the character you most want to replace (or the character you are having the least amount of fun with) and then replace them from the group. Exporting them will keep their current items and lvl if you wish to play with them again in the past.
Step 5: Repeat step 4 until you only have one PC left.
Step 6: Send me a cheque or money order for curing rerollitis
Pros:
-get tired of rerolling after 6th PC.
-get to try out multiple builds all at the same time
-one of the reasons why most people have rerollitis is not due to their PC, but due to the same NPCs they take along. The strategy from one character is replaced but a good chunk of is still your standard tactics that you have developed over at least the last year.
Cons:
-Less XP in the beginning as 6 characters are sharing it right away
-Dream sequences will only happen for the first PC. All others get diddly.
...what.
Failing that, it turns out the archer ranger kit is really fun. Like a kensai from thirty feet away. Just don't go with longbows. They're powerful in BG1, but they are a trap that will screw you in BG2. By the end of TOB you'll have enough proficiencies to dig yourself out of the longbow hole, but still, not worth it.
I'm tempted to try a stalker.. or archer.
Stalker with single weapon style and bow seems a little weird though, with the two free DW pips.
Barbarian could be fun too.. although i don't see much reason for Barbs/pure fighter.. I mean.. if you're lvl 20 or lvl 40 doesn't even matter, you'll still just hit things and go "orc smash! orc smash!" xD
Killed Tarnesh with one command and one lighting bolt.
Derailing my own topic a bit: Am I the only one to feel that playing a support/ranged char is sort of lame, concidering you're supposed to be a supreme being and child of Bhaal? Just look at your advesaries later on.. they're all murder on legs.. hehe.
Anyway.. here's what I've got on my thoughts atm;
Archer
Fighter dualed to thief, focus on Singlehanded, Longsword and a bow. (Actually not DW at all for once..)
Fighter/Mage, DW'ing longswords/scimitars
Fighter/Druid, Anyone got experience with this? Jaheira seems quite lackluster tbh.. always found Anomen to be supreme in comparisin.
Stalker. Singlehanded + bow? or would you DW?
Fighter dualed to Cleric, EEKeeper to set to that cleric kit that gets the +4 sword..? Could be fun, yes?
(Does this sword get Strength damage bonus, or is it a flat 1D8?)
So many choices..
if you don't want to go so OP, a kensai half-orc wielding two handed swords?
Fighter/Mage: There are number of ways to do this, but I prefer a multi-class dual-wielder in either Long Swords or Scimitars who wears no armor and casts spells upon sighting enemies and also during the heat of battle. Use Armor, Shield, and a Familiar to increase HP. You'll suffer a bit of damage from time to time, but nothing you can't easily handle with healing potions. In the meantime it's fun to debilitate enemies with spells while you're also whittling them down on the front line. I prefer spells that render enemies helpless such as Sleep, Blindness, Charm (make enemies attack their own party), Glitterdust, Ray of Enfeeblement (encumbers heavily armored enemy tanks), Horror, Hold Person, and Slow.
If you enjoy the backstabbing on your thieves, you'll probably enjoy the stalker too.
Try not to be truthful about it. Would you really be a religious, zealous paladin do-gooder, accepting all quests for no money? Would you really be a psychotic and malicious killer? Do you break many laws?
Try taking the online DnD tests to discover what alignment and class you are. Be truthful and honest and the test should be quite accurate. I ended up being a True Neutral Bard in one test and a True Neutral Swashbuckler in another. Probably the most right in DnD terms.
I find this way of playing the most fun, and I rarely restart if I play this way.
Elf
Fighter/Thief
Singleweapon style
Katana (To use katana is just another way to promote using ranged weap, due to them being few and far between)
Shortbow
Will use later pips to get crossbow or a blunt melee weapon.
(Firetooth is just so much fail.. awesome weapon at 1apr.. wtf xD)
I could do a fighter dualed to thief to get grand mastery in shortbow, but I just don't wanna play a humie anymore.
