Okay, it's an old chestnut but what the heck:
Not your favorite party. The deadliest party you can assemble using any number of NPCs and one PC. The party as a well-oiled killing machine. For either BGEE or BG2EE. Who's in the lineup?

And this is mainly because bows and backstabbing are so powerful in BG1. The PC and Imoen backstab. The PC uses a quarterstaff (with 19 Str plus cleric buffs), starting with the staff +3 in Ulgoth's Beard and eventually the Staff of Striking. Imoen eventually uses the Dagger of Venom and Gauntlets of Ogre Strength. At least two enemy spellcasters in enemy parties will fall instantly to the thieves. Coran and Kivan mow down the enemy with their bows as Kagain takes point. Edwin casts disabling spells such as Blind, Sleep, Horror, Hold Person, Emotion: Hopelessness, and Chaos.
One day I'd like to try a PC Fighter who grandmasters in Crossbow and uses the Light Crossbow of Speed with Bolts of Biting. Hasted? The total damage would be insane with all that poison damage.
Has anyone else noticed they fixed the bug where you could assign all your pips to one weapon when dualing INTO fighter?

Jahiera and Anomen are both very solid tanks with a side order of divine casting. Having both gives you a solid frontline and all the buffing and healing you could want. Taking Anomen rules out Keldorn because both need the Gauntlets of Dexterity to perform fully, so a PC Inquisitor makes sense. That or a Fighter/Mage because they're generally awesome.
I choose Imoen as the main mage over Edwin or Neera because she gets a few extra HP and a bit of flexibility from her thief levels, though either of them could be substituted. Jan's a decent mage and a great thief with a dozen unique items. He also gets UAI and Spike trap, 'nuff said.
The last spot is actually a fairly free choice. You've got 3 frontliners and 2 or 3 arcane casters sorted. Monks do get generally great so Rasaad is a consideration, Sarevok is Sarevok and Haer'Dalis is someone I've really underrated until recently. This could also be a rotating spot for NPC quests or a second Player character.
Fighter PC dual-wielding Long and Bastard swords.
Korgan (same weapons as @Skaffen said, he's killer).
Dorn, with the Silver Sword and Ir'rekyeval later.
Viconia, Sling of Erevard, sometimes loaded with magical bullets for more damage and more THAC0.
Hexxat, either with Gesen's Shortbow or with Tuigan Bow+1.
Neera, with the Crimson Dart+3, and the throwing dagger Firetooth+3 (when the patch comes, fix the STR applying on it).
Dorn died several times (due low HP, the PC and Korgan have 19 CON each one, so... She (Valhalla, my Valkyrie PC has 171 HP XD), 90% of the reloads are because of Neera failing to learn a spell. I'm not counting when I'm looking for bugs, there I reloaded about a thousand or two thousand times.

This is shorty intensive party, shorty saves work well with insane scs. Good ranged potential, powerful magic attack. Somewhat lacking on the healing front but i dont really play clerics much.
